A Healthy Dinner Recipe Idea for Kids

Like many parents I know, I am in a food rut with the kids. I tell myself that I only want them to eat healthy, fresh foods, and most of the time I can achieve that, but find myself struggling at dinner to prepare something that is both nutritious and yummy…oh, and easy too!

“What do you guys want for dinner?” is a question that I probably shouldn’t ask. Hot dogs, pizza, and macaroni seem to be the 3 things they shout out.  Please explain to me how my older two will only eat Flax cereal for breakfast, apples and whole wheat sandwiches for lunch, carrots and cheese for snack, yet request the same unhealthy options for dinner…Every.Single.Time!

So, I’ve decided to give in to their requests with a healthy and fun spin. I just found out that Rebecca Cameron, owner and chef of Moxie Kitchen not only prepares healthy pizza kits that she sells at the Puyallup Farmer’s Market for $15.00, but she is soon to be found in a few select stores AND is even looking into a local delivery service.

Whole Wheat Moxie Pizza KitShe has three different options for her pizza kits; traditional, in which she uses unbleached white flour; whole wheat (which of course, I selected), using Bob’s Red Mill whole wheat flour; and even a gluten free option with flaxseed.  Each all organic kit comes with dough, her special tomato sauce recipe, mozzarella cheese, and fresh basil.

The kids had such a great time making their pizzas and we were happy with the fact that it was organic, healthy, and that we were supporting a local business. Dinner time wasn’t the same old routine, and we interacted as a family and had a lot of fun.
